2 cups white cabbage, shredded
2 cups purple cabbage, shredded
1 cup Brussels sprouts, shaved
1 cup carrots, sliced
1/2 leak, sliced into “matchstick” strips (white only)
1 daikon radish, diced
1/2 cup cilantro, chopped
1/4 cup apple cider vinegar
1/4 cup dairy free mayonnaise (used Vegenaise)
1 tsp. Poupon mustard
2 Tbsp. tahini
In a large mixing bowl, combine cabbages, Brussels sprouts, carrots, leak, and daikon radish. Mix well, set aside.
In a mixing bowl, combine vinegar, mayonnaise, mustard, and tahini. Wisk together
Add salt and pepper to your personal taste.
Pour over coleslaw salad and mix well.
Top with cilantro
